Red Velvet Cheesecake Cupcakes..... Ingredients Cupcakes 2 cups sugar 250 g butter, at room temperature 2 eggs 2 tablespoons cocoa powder 1 ounce red food colouring 2½ cups cake flour 1 teaspoon salt 1 cup buttermilk 1 teaspoon vanilla extract ½ teaspoon baking soda 1 tablespoon vinegar Filling 1 x 250 g package cream cheese, softened ½ cup powdered sugar 1 egg pinch of salt ¾ cup mini chocolate chips Chocolate Ganache 120 g semi-sweet chocolate chips ⅓ cup unsalted butter, cut into pieces ⅛ cup light corn syrup ½ teaspoon vanilla Instructions Preheat oven to 180 degrees C. In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition.
