Black Sam Smoque is devoted to the
love of meat. Seriously!So serious that we have slavishly brought two kick-ass mobile smoker cookers all the way from the heart of Dixie - Nahunta, Georgia
With our mobile smoker cookers we will introduce American style BBQ to braai-crazy South Africa. Wherever, and whenever, we pop-up in Johannesburg our mission is to spread the gospel of 'que (that's short for barbeque).
Inspired by all the major styles (Carolinas, Texas, Memphis and Kansas City) with some surprising and hopefully delightful twists, we've worked hard to match the right cut of meat to the right rub, hardwood, sauce and cooking technique.
Everything from our ribs, chicken, brisket and pork to our sides has been meticulously developed and lovingly prepared to bring our community the best 'que that we can make.
Our cooking philosophy can be summarised as "low and slow" - a reference to the low, Kameeldoring and Mopani wood infused smoking process of preparing our meat which can take anything up to 12 hours. Each 'que will have a limited amount of meat (as much as our cookers can take) so folks when it's finished, it's finished!
Oh, by the way DON'T ask us for knives or forks - it's all about getting down and dirty with your hands. If the Almighty wanted you to eat with a knife and fork, well....
We currently do not have a permanent home,
we are what you would call "underground" - we can pop-up at any
location at any time. If you want to be sure of finding us, you could just book
our services.
